A. COST CONTROLLER

POSITION SUMMARY:

The Cost Controller is responsible for planning, organizing and managing all Club Costs.

 DUTIES AND RESPONSIBILITIES:

  • To control the Food & Beverage Cost and together with chef engineer the menu in terms of costing.
  • Prepare variance analysis for food & beverage and communicating / discussing with ‎relevant parties. ‎
  • Update and maintain receipts into the systems.
  • Update selling prices in POS as per the instruction from authorized persons. ‎
  • Continuously study weaknesses in controls implemented at the restaurant and ‎suggest for improvements.
  • Check the daily Food & Beverage revenues report submitted by the income audit for ‎accuracy.
  • Prepare the daily and monthly cost report department in relation to cost of sales.
  • Be in charge of monthly stock count & advise on minimum stock levels. Change in buying price of Store items from time to time & their respective impact on product pricing
  • Maintain a daily record of inventory purchased and ensure ‎it balances with accounts payable.
  • Ensure proper receiving procedures and that the scales are correct and ‎goods are checked for quality.
  • Check and ensure that no material is issued out from the store without requisition or ‎approval from the respective department head. ‎
  • Prepare daily staff meal cost report. ‎
  • Organize and do stock take and monthly stock taking.
  • Check invoices against receiving record and compare them with purchase order and ‎purchase request, and to ensure that all invoices are stamped and signed by the ‎authorized person.
  • Record the total daily purchase by chart of accounts and accumulate for month end ‎balancing with account payable.
  • Check and ensure that all inventories purchased are in balance with account payable ‎on a bi-monthly basis.
  • Ensure that purchasing obtain up – to – date and accurate prices by comparing ‎prices against supplier’s quotations. ‎
  • Check and review filled requisitions and ensure that goods issued are not more than ‎requested. ‎
  • Conduct spot check to ensure that the goods received are as per specifications and ‎the deliveries of goods by suppliers are consistent with the receiving schedule and ‎the storerooms are not overstocked especially during month – end. ‎
  • Audit monthly stock and prepare reconciliation on all rooms. ‎
  • Post actual stock results in the system and print inventory valuation report. ‎
  • Reconcile all inventory accounts based on actual purchases and actual inventory ‎stock take and allocate the expenses to the respective department based on their ‎requisitions.
  • Organize the bi-yearly stock –take on all operating equipment of the restaurant and ‎prepare detail loss and breakage quantities and amount. ‎
  • Updating the material control system with goods received notes ‎‎(GRNs), stock transfers etc. and updating sales from POS system at the ‎restaurants. ‎
  • Maintain Material Control System. ‎
  • Coordinate with group IT division and/or service provider for systems maintenance.
  • Guides and directs storekeeper on order schedules, shopping lists and deadlines.
  • You will promote team work, team spirit, and friendliness among your fellow work mate and colleagues.
  • Ensure that established controls and procedures in respect of the controller’s areas of responsibility are complied with at all times.
  • Provide management with timely reviews of operating financial status; researches inventory and cost of food variances and prepares monthly internal cost of product analysis reports using sales and inventory reports from various systems.
  • To ensure that there are at all times proper procedures and controls for purchasing, receiving stores and requisitioning.
  • Maintain proper and complete records of the Hotel to ensure that the accounts, records and transactions of the Hotel are accurate and correct at all times.
  • Any other task assigned.

QUALIFICATION

Certified Public Accountant Grade II.

At least C minus (Mean Grade) and at least C plus in Mathematics in KCSE.

Minimum age 22 years.

Medical Fitness: Must be declared medically fit by a Club appointed Medical Practitioner

Diploma in Supplies and Stores Management from the KIM, IHRM, ISP or an equivalent will be an added advantage.

Well versed with Computer applications.

Computer Literate.

EXPERIENCE

At least 2 years’ experience in Cost Control. Must have a certificate of Good Conduct from the Kenya Police.

B. Pastry Chef

Main Purpose & Scope of the Job

The Assistant Chef will assist the Executive Chef with daily activities of the Kitchen, including menu development, inventory, purchasing of supplies, and cost control. He/she will also be responsible for the production and presentation of pastries, desserts, bread and other baked products.

 

 

Key Responsibilities for this Post

  1. Decorate pastries using different icings, toppings etc. to ensure the presentation will be beautiful and exciting
  2. Creating new and exciting desserts to renew our menus and engage the interest of customers.
  3. Operating and managing the pastry section of the kitchen and liaising with the executive and sous chefs to ensure a successful working environment.
  4. Preparing ingredients and handling baking and other kitchen equipment.
  5. Creating pastries, baked goods, and confections, by following a set recipe.
  6. Developing new recipes for seasonal menus.
  7. Decorating pastries and desserts to ensure beautiful and tasteful presentation.
  8. Meeting with customers to discuss details and planning of custom-made desserts and pastries for special occasions, such as weddings.
  9. Monitoring the stock of baking ingredients.
  10. Ordering new supplies, ingredients, and equipment for the pastry section, when needed, and within budget.
  11. Ensuring their section of the kitchen adheres to safety and health regulations.
  12. Supervising and training staff members, when needed.
  13. Be conversant with HCCP and first Aid basic knowledge.
  14. Develop and maintain updated operations manuals for all food production and stewarding sections and make recipes and maintain up- dated and accurate costing of all pastry dishes.
  15. Decorating pastries using different icings, toppings etc. to ensure the presentation will be beautiful and exciting.

Key Requirements for the Job

  4. Creative ability with artistic skills in decorating cakes and other desserts.

  1. Diploma in Food Production, pastry
  2. Certificate in culinary arts, pastry- making, or relevant field with at least three years’ experience,
  3. At least 3 years’ experience in a busy kitchen in pastry section.
  4. Minimum Age 22 years.
  5. KCSE Certificate.
  6. Must be declared medically fit by a Club appointed Medical Practitioner.

C. COOKS

POSITION SUMMARY:

The ideal candidate for this position will be a natural leader who always has

a finger on the pulse of current culinary trends.

 

DUTIES AND RESPONSIBILITIES:

  1. Preparing sauces and other accompaniments.
  2. Preparing ingredients to use in cooking.
  3. Check food while cooking to stir or turn.
  4. Ensure great presentation by dressing dishes before they are served
  5. Keep a sanitized and orderly environment in the kitchen
  6. Ensure all food and other items are stored properly
  7. Check quality of ingredients.
  8. Handling multiple food orders at one time.
  9. Bake, grill, steam and boil meats, vegetables, fish, poultry and other foods.
  10. Follow recipes, including measuring, weighing and mixing ingredients
  11. Washing, peeling, chopping, cutting and cooking foodstuffs.
  12. Check the quality and freshness of ingredient.
  13. Operate kitchen equipment such as broilers, ovens, grills and fryers

PREREQUISITES:

Must be able to communicate in English; writing and speaking, good personality and positive interpersonal skills required. Must have proven knowledge of standard operating procedures of a hotel and Food Handlers Processes & Standards.  Should be well versed with computer applications.

EDUCATION:

Holder of a KCSE Certificate, Certificate in Food Production from Kenya Utalii or equivalent. Computer Knowledge and experience in MS office programs.

EXPERIENCE:

2-years’ experience as a Cook in a 2/3 Star establishment.

D. BARMAN/ BARLADY

Main Purpose & Scope of the Job

The Bartender will work directly with customers by mixing and serving drink orders. He/ She will be responsible for verifying age requirements, knowing alcohol pairing and tastes, knowing how to make traditional and classy drinks, processing payments, managing inventory and cleaning bar supplies and bar merchandise.

  2. Adhere to all local and national liquor laws
  3. Mix and serve drinks following set standard recipes
  4. Greet guest in a timely manner and take orders
  5. Process cash and credit card transactions following appropriate procedures
  6. Maintain a safe and clean environment for guests and team
  7. Carry out all tasks with attention to detail, cleanliness and safety
  8. Assist with inventory and inventory control

Key Qualification and Experience

  1. Minimum age 22 years.
  2. KCSE Certificate.
  3. Certificate in Food and Beverage Services and Sales from Kenya Utalii College or equivalent.
  4. Must have worked as Waiter and Barman for 3 years in a busy Restaurant and bar operation.
  5. Function service and Club experience an added advantage.
  6. Proficient knowledge of Hotel Systems and other computer applications.
  7. Must be knowledgeable in all types of alcoholic and non-alcoholic beverage.
  8. Must be knowledgeable in both alcoholic & Nonalcoholic cocktails and cocktail making.

E. GROUNDS MAN

Main Purpose & Scope of the Job

We are looking to recruit a dedicated grounds man to maintain the appearance and functional soundness of our club grounds. The grounds man is responsible for maintaining equipment and materials. He/She will ensure the appearance of trees, shrubs, flowers and keep the grounds free from harmful insects and plant diseases. Preferred candidate must be hardworking, detail oriented and organized.

Key Responsibilities for this Post

  1. Maintaining condition and appearance of lawns, and grounds.
  2. Mowing, watering, and fertilizing lawns.
  3. Planting, trimming, mulching and fertilizing flowers, shrubs and trees.
  4. Cleaning and painting, poles and signs.
  5. Keeping facilities and surrounding areas free from trash, litter, debris and weeds.
  6. Cleaning and maintaining equipment and materials.
  7. Following applicable safety guidelines and procedures.
  8. Performing other duties as required.

 

Key Qualification and Experience

  1. Minimum age 22 years.
  2. KCSE Certificate.
  3. Formal training in gardening, farming, flowers and landscaping.
  4. Persons with Certificate in plant agriculture will be an added advantage.
  5. Previous experience in a sports Club or golf course is an added advantage
